The menu tonight:

Seared tuna with spicy salsa

White chocolate mousse with fresh strawberries

Welcome to our summer July two-course charity fundraising menu.

As you see we are having a simple but delicious dinner. 

What’s going to be happening?

First – marinate the chefs!

  1. First – marinate the chefs!
  2. Then we’ll start by making the white chocolate mousse because it needs a few minutes in the fridge to cool and partially set. You will have had chocolate mousse before but white chocolate mousse? Perhaps not – you are in for a treat.
  3. Whist the mousse is setting, we’ll cut up the strawberries and then make the salsa. No cooking required – just some easy chopping and mixing.
  4. Finally, we’ll flash fry the tuna. Flash frying means frying quickly so that the centre of the tuna remains raw.
  5. If you prefer not to eat fish, then you can substitute for your favourite vegetarian/vegan option – we often use haloumi cheese for example. The salsa will go with just about anything.
  6. If you can find nice fresh strawberries, you can use any other berry – they all work well.
  7. The whole thing shouldn’t take more than 30 minutes – unless you are having a really good time.
  8. Print off the ingredients list – see what you need to buy and we’ll see you in the kitchen.

Main tasks

Here are the main tasks – you can divide them by person or team:

  • Make the white chocolate mousse – heating, whisking and mixing
  • Chop up the strawberries – chopping
  • Make the salsa – chopping 
  • Flash fry the tuna - frying

Start by making the white chocolate mousse because it needs some time to cool and set. 

The salsa can stand for 15-30 minutes to develop the flavours (but this is not critical)

Fry the tuna at the last moment because it is served immediately.
