White chocolate mousse with fresh strawberries

Equipment

  • A saucepan to boil a small amount of water
  • A heatproof bowl which will sit on top of the saucepan of boiling water (it is important that the heatproof bowl does not sit in the water – it is the steam from the boiling water which will melt the chocolate)
  • A bowl to whisk the egg whites
  • A hand blender or whisk
  • A spatula or spoon

Ingredients

  • 100 g 3 1/2 oz white chocolate

  • 160 ml 5 2/5 fl oz Double cream

  • 40 g 1 2/5 oz Caster Sugar

  • 2 2 Egg whites

  • 1 1 punnet strawberries

Directions

  • To make the white chocolate mousse
  • Gather your ingredients.
  • Add about 2cm/1 inch of water to the saucepan and set it on the heat
  • Break up the white chocolate 
    Put the pieces into the heatproof bowl
  • Break up the white chocolate 
    Put the pieces into the heatproof bowl
  • Add the double cream to the white chocolate pieces in the heatproof bowl
  • Place the heatproof bowl with the white chocolate and cream on the saucepan with the boiling water (make sure the bowl is not sitting in the water)

    The steam from the boiling water will warm the cream and melt the chocolate. 

    Stir the cream/chocolate mix to allow the chocolate to melt evenly.

    When three-quarters of the chocolate has melted, you can remove the bowl from the saucepan and allow the residual heat in the cream to melt the remaining chocolate. Watch out – the bowl is very hot!! (Yes we have grabbed a really hot bowl and exclaimed)

    Keep stirring until the chocolate is completely melted.

    Set the bowl aside to cool.
  • Whisk the egg whites to “stiff peaks” – this means the whisked egg white can support its own weight – when you remove the whisk you should see peaks of egg white.
  • Add the sugar to the whisked egg white and continue to whisk until all the sugar has been incorporated – a few seconds usually
  • Stir the whisked egg and sugar into the melted chocolate and cream. Do this gently so you don’t knock all the air out of the eggs. 
    Continue to stir until all the eggs white is incorporated. You should see a completely uniform mixture.
  • Pour the mix into glasses and set in the fridge to cool and partially set.
  • To prepare the strawberries
  • Slice the top off a strawberry to remove the green leaves.
  • Place the strawberry with the cut side down to give you a stable base.
    Slice down into three or four pieces.
  • Put the slices into a bowl and set aside.

    The sliced strawberries will go on top of the partially set chocolate mousse.
