Summer Menu 2024

Let’s talk about the Summer menu. 

We have been raising money for charity through the Dedham Supper Club for 10 years now and so we have had quite a few dishes to choose from for this first of our menus we are inviting everyone to produce.

We’ve picked dishes that we know work well because they always get great feedback and that do not require any special skills or equipment. As long as you can wield a knife you will be fine. All the dishes we have chosen are vegetarian except the main course which has a vegetarian alternative.

There are six courses if we include the famous sable biscuits. Before we start a word on portion sizes. There are six courses so we have to scale back the size of the portions otherwise we will overwhelm the guests with food. In the early days we made the portions far too big and the constant early feedback was smaller is better. 

We start with a cold salad of roasted beetroot and goat’s cheese. Beetroot and goat’s cheese is a classic combination and it always works well. We have done all sorts of variations over the years and for this menu we are using candied pecans as well as the normal green dressed salad leaves. It is a simple dish to prepare but it is a great one to start with – it looks good and tastes great.

Then the soup. Some years ago we were inspired to create a lettuce soup. It was a surprising but big hit and we have been making it ever since. It is a great talking point because we can almost guarantee that none of your guests has ever had lettuce soup. Again dead easy to make.

Then we move to the main course. We a doing a slow cooked lamb on a bed of ratatouille with dauphinoise potatoes. For the vegetarians we have the Vegetable Wellingotn.

After the main is the sorbet. The sorbet became a regular feature of the menu from our very first test and we vary the flavour with the season. This is Summer so in the UK that means rhubarb. Sorbet is easy to make, packs great flavour and you don’t need an ice cream maker.

Next the sweet and again we have chosen a long term classic. Deconstructed blueberry cheesecake – always a winner and again very simple to make.

Finally the famous sable biscuits serve with your choice of teas and coffee. Again we made the sable biscuits for the very first Dedham Supper Club and they have been a permanent feature since then. 

So we are. A fabulous tried and tested – always a winner menu for you to cook together for your invited guests.
